Featuring This Issue: Bucatini All'Amatriciana Paired with Chianti
Found in Rome and the surrounding region of Lazio, this traditional pasta dish is created using a uniquely shaped spaghetti, hollow and slightly larger than normal, affording more absorption of flavors. Excellent wine pairings come from Italy's Tuscany region, home to the grape variety Sangiovese, the building block for traditional Chianti blends. Here, dry, red wines are produced that display a pleasantly bitter character; mildly smoky with a ripe, wild cherry flavor.
The Chianti Classico zone is a good source for medium-body wines that match the savory layers of the Bucatini All'Amatriciana while offering fruit essence to tame the pasta's pepperoncini. Conversely, the sheep's milk cheese and tomato sauce ingredients will balance the wine's bitterness and dry tannins. Monsanto's Chianti Riserva 2005 creates such a pairing, having a few years of cellaring to round off the youthful edginess. If one prefers deeper fruit flavors, I recommend the producer Fèlsina.
